Pickled green chillies

Ingredients
  • 10-15 green chillies
  • 1 cup white rice vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 cup boiling water

Method
  1. Slice the green chillies and place in a medium bowl.
  2. Add boiling water to chillies, and let sit for about 10 minutes.
  3. Drain and place chillies in a sterilized jar. (To sterilize, boil jar and lid in hot water for 15 minutes)
  4. In a separate bowl, mix vinegar, sugar and salt, stir to dissolve.
  5. Pour vinegar mix over the chillies. Top up with more vinegar if required to cover all the chillies.
  6. Leave in fridge overnight.

Best condiment for a noodle dish.

Salmon with Garlic Sesame Spinach

For Salmon:

Season and grilled/baked salmon the way you like it.
Some idea; lemon, pepper, butter, garlic, salt..

 

For Spinach:

Ingredients

  • 400gm fresh spinach, cleaned
  • 1 teaspoon sesame oil
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • pinch of teaspoon salt

Method

  1. Heat a pan. Pour-in olive and sesame oils.
  2. Put-in the garlic after a few seconds. Make sure that the oils are not too hot to prevent the garlic from browning.
  3. Add the spinach. Cook for a few minutes while stirring once in a while.
  4. Sprinkle salt. Stir.
  5. Transfer to a serving plate together with the salmon and serve.

Tips:
*This is not the local spinach ya, bukan bayam dan bukan kangkung.Tapi kalau nak guna yang local pun boleh gak kot, ntah la.
*Kalau nak makan tanpa nasi, letak garam sikit je dah cukup, kalau nak makan ngan nasi, boleh la tambah garam lagi.

Cream of Mushroom Soup

Ingredients

  • 1 pound regular white mushrooms, cleaned, quartered or sliced
  • 1 Tbsp lemon juice
  • 1 Tbsp unsalted butter
  • 2 Tbsp minced shallots
  • 1 Tbsp chopped fresh thyme or 1 teaspoon dried thyme
  • 1/2 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 2 cups heavy cream or/and milk
  • 1 1/2 cups chicken stock
  • 1 teaspoon cornstarch dissolved in 1 tbsp water
  • minced parsley for garnish

Method

1. Melt butter in (4-5 quart) sauce pan and lightly sauté shallots on medium heat. Add mushrooms, thyme and bay leaf, sauté over moderate heat for 10-15 minutes, or until quite dry.
2. Add salt, pepper, chicken stock and bring to boil. Reduce heat and simmer for 20 minutes.
3. In a food processor, coarsely chop mushrooms and add lemon juice (or you can choose to chop the mushroom before cooking).
4. Add cornstarch and cream or/and milk, simmer for 10 minutes, stirring constantly. Correct seasoning and add more lemon juice to taste. Serve sprinkled with a little parsley.

I never knew that it was so easy to make a great satisfying cream of Mushroom Soup and it only cost a few ringgit yet it is so hard to get a tasty mushroom soup outside except from a 'well-known' restaurant.
I added in some broccoli to get the green effects.
Definitely will make more anytime soon.

Cream of Pumpkin Soup

Servings: 4
Ingredients
- 2 pounds fresh pumpkin
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 carrot, diced
- 2 tablespoons butter

salt and pepper to taste
- 4 cups chicken or vegetable broth
- 1 cup cream or milk

Directions
  • Peel, seed, and cube pumpkin into 1" cubes.
  • In sauce pan, melt butter. Add onion, carrot, pumpkin, and garlic. Cook for 10 minutes or until onion softens. Season with salt and freshly ground black pepper.
  • Add broth. Bring to a boil and reduce heat. Partially cover and cook approximately 40 minutes or until pumpkin is soft.
  • Pureé the soup in a blender or food processor.
  • *Keep some in the freezer if you like to.
  • Return mixture to pan and reheat on low.
  • Stir in cream and continue to heat on low for an additional 1 minute. Garnish with chives.

Cream Of Broccoli Soup

Ingredients

  • 2 tablespoons butter/olive oil
  • 1 onion
  • 1 stalk celery
  • 3 cups chicken broth
  • 8 cups broccoli florets
  • 3 tablespoons all-purpose flour
  • 2 cups milk/cream
  • ground black pepper to taste
  • salt

Directions

  1. Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
  2. Pour the soup into a blender, and blend.
  3. Over medium-heat add in flour and milk/cream. Stir until thick and bubbly. Season with pepper and serve.

Brocolli Cendawan (mushroom)

Bahan-bahan:

5 ulas bawang putih dibuang kulit dan di ketuk
2 pokok brocolli
5 batang cendawan kering direndam sehingga kembang, dibuang batangnya dan kemusin dihiris nipis
1 ikat cendawn Innoki
3 sdb sos tiram
1/2 sdt lada putih
1/2 sdt gula
beberapa titisan minyak bijan
1 sdb minyak untuk menumis
1/2 gelas air


Caranya:

1. Potong brocolli .
2. Rebus air dan titiskan sedikit minyak masak. Apabila air masak, celur kan brocolli selama 3 min dan kemudian di angkat dan ditoskan.
3. Panaskan minyak masak didalam kuali. Bila minyak sudah panas, tumiskan bawang putih yang telah di ketuk
4. Masukkan sos tiram, lada putih dan gula. Campurkan 1/2 gelas air. Biarkan ianya menggelegak.
5. Masukkan cendawan shiitake dan biarkan sebentar.
6. Masukkan cendawan Innoki.
7. Titskan minyak bijan dan diangkat.
8. Letakkan brocolli tadi diatas pinggan dan kemudian curahkan kuah cendawan tadi ke atas brocolli.

Kailan Beef

200 to 300 gm of sirloin or tenderloin beef, thinly cut seasoned with
1 tbsp of light soya
1 teasp of sesame oil
1/2 teasp of salt and pepper
1 heaped teasp of corn flour

1 bunch of kailan, washed and cut
carrot, washed and cut
1 tbsp of shallot, sliced and roughly minced
3 - 4 pcs of ginger
2 tbsp of shaoxin cooking wine
salt to taste

1) With a pot of boiling water with 2 tbsp of cooking oil and 1 teasp of salt added, blanch the kailan dan carrot very quickly. Don't cook through the veg at this stage. Drain and set aside.

2) In a wok, with 2 tbsp of cooking oil, stir fry the ginger and shallot til fragrant. Bring to high heat, add seasoned beef, stir fry and loosen the meat if they are sticking together. Add 2-3 tbsp of water.

3) When the meat turns 80% pale, add pre-blanched kailan, stir fry till both meat and veg are well mixed. Add salt or oyster sauce (optional) and cooking wine.

Cucumber Pickle (Acar Timun)

*sesuai dihidang bersama keropok goreng.

Ingredients :

2 cucumbers
1 carrot
1 red chili
1 large onion
8 tbspoon salt
8 dried chilies
4 shallots
2 cloves garlic
3 piece ginger
candlenuts (optional)
dried prawns
oil
mustard seeds
1/2 tspoon turmeric powder
3/4 cup vinegar
3 1/2 tspoon sugar



Method :

  1. Cut cucumbers and carrot into strips.
  2. Cut the red chili into strips and the large onion into wedges.
  3. Sprinkle salt over the cut vegetables and let them stand for at least 2 hours.
  4. When the vegetables are limp, wash away the salt and spread them to dry.
  5. Grind together the chilies, shallots, garlic, ginger and candlenuts.
  6. Pound the dried prawns.
  7. Heat the oil and fry mustard seed for 1/2 minute before adding in the ground ingredients and turmeric powder.
  8. Fry for another 5 minutes.
  9. When the oil separates, add in the dried prawns and continue cooking for another 3 minutes before adding in the vinegar and sugar.
  10. Cook slowly until the mixture is fairly thick.
  11. Add in more salt and sugar if necessary.
  12. Stir in the prepared vegetables and toss quickly to mix well.
  13. When the vegetables are well mixed with the spices, remove the pan from the heat.
  14. Cool slightly before storing in clean, dry jars.
